Application: Customers’ two hot dog production lines were shut down by USDA inspectors because of excessive Lysteria bacteria concentrations in their product. Customer was loosing $100,000 / day in lost production as well as the liability concerns of their consumers. Infection of the product was occurring in an open section of the hot dog tunnels used for isolating the cooking section from the brine wash section.
Solution: Markair designed, furnished and installed a 100% outside air system including make up air tunnel section, ductwork, a custom air handler and tracking controls that would provide separation of cooking and brine wash sections of the hot dog tunnels and would isolate product from Lysteria sources. The ductwork, air handler and make-up air tunnel section were food grade washdown construction. The air handler was a custom unit including HEPA and irradiation filtration. The system tracked tunnel air flow requirements utilizing a mass flow sensor which modulated the VFD controlled air handler. The system was designed furnished and installed in four weeks.
